Living in Texas, we’re all familiar with Tex-Mex or Cal-Mex. But authentic Mexican food has spices and chiles we rarely see and use. In this class, the mole is bursting with flavor from over 20 ingredients in the sauce. We’ll smoke whole chickens over a wood fire and serve it with a rich, red mole sauce. After dinner, we’ll fry up some churros and serve them with some Mexican drinking chocolate.
